1 baked pie shell
3 T all purpose flour
1 c sugar
3 T Hershey’s cocoa powder
1½ cup evaporated milk (12 oz. can)
2 egg yolks
2 T butter
1 tsp vanilla
Meringue:
3 egg whites
¼ tsp cream of tartar
½ tsp vanilla
6 T sugar

Directions:
Pre-bake pie shell and let cool down. Set aside.

Put the flour, sugar, cocoa powder and milk in a 2 quart pot. Mix well with a whisk and let sit for 5 min. Cook over medium heat, stirring often until thickened. Quickly add egg yolks, vanilla, and butter. Stir well until blended and smooth.

Pour hot filling into pie shell. Let cool completely!

Meringue:
Eggs should be at room temperature. Beat egg whites with vanilla & cream of tartar.
Gradually add sugar beating until stiff & glossy. Spread over chocolate filling.Bake at 350º until peaks are golden. (Approx. 15 min.)

Viola Mire was Johnice Young's mother as well as Ed Aucoin's aunt. She was one of the oldest members of the Lake Charles Ward. Johnice says she was known in the ward for her Chocolate Pie and made it many times.
