1 cup carrots
1 cup celery
1 cup sweet onion
2 garlic cloves
8 cups chicken broth
2 bay leaves
1 tsp. fresh thyme (˝ dried thyme)
1 tsp. pepper or to taste
12 oz. egg noodles
2 cups shredded cooked chicken
Salt to taste

Directions:
Directions:
In a large Dutch oven add oil and heat over medium-high heat until warm.

Add carrots, celery and onion and sauté until vegetables bein to soften. Add garlic and sauté 1-2 minutes.

Add chicken broth, bay leaves, thyme, pepper and bring to a boil. Allow to boil for about 5 minutes or until vegetables are tender.

Add the egg noodles and boil mixture for about 10 minutes or until noodles are cooked. Add chicken and boil until chicken warm. Add salt to taste.

Will often make own broth with leftover chicken bones and use in soup instead of chicken broth.
