2 T. vegetable oil
3 lbs. lean beef chuck, coarsely ground,
1/2 c. Instant minced onion
1/3 c. chili powder
2 T. ground cumin
1 T. paprika
1 tsp. oregano leaves
1 tsp. garlic powder
1 tsp. salt
1/8 tsp. each: marjoram,
thyme leaves & rubbed sage
2 c. chicken broth
3/4 c. beer
1-1/2 tsp. sugar
1/2 tsp. ground black pepper

Directions:
Directions:
Heat oil in a large heavy saucepan or Dutch oven. Add one-third of the beef; cook and stir just until it loses its pink color. Transfer with a slotted spoon to a large bowl; set aside. Repeat with remaining meat, then return all the meat and juices to the pan. Add onion, spices and herbs, chicken broth, beer and tomato sauce and bring to a boil. Reduce heat; simmer partially covered for 1-1/2 hours, stirring occasionally. Add sugar and pepper. Makes 10 (8 oz.) servings.
