Ingredients: 2¾ cup all-purpose flour 1 tsp baking powder ½ tsp baking soda 1 tsp salt 3 T poppy seeds ¾ cup unsalted butter, softened to room temp 2 cups granulated sugar 4 large eggs, room temperature 2 tsp vanilla ⅓ cup fresh lemon juice 2 T lemon zest ¼ cup vegetable oil 1 cup sour cream
Lemon Glaze: 1 cup powdered sugar 3 T fresh lemon juice or as needed to thin glaze 1 T butter

Directions:1. Preheat oven to 350º. Whisk together flour, baking powder and baking soda, salt and poppy seeds. 2. In another bowl beat the butter and sugar until light and fluffy. 3. Mix in eggs one at a time, then mix in vanilla. Slowly mix in lemon juice, lemon zest and oil. 4.Alternate mixing the flour mixture and the sour cream into the wet ingredients, starting with flour and ending with flour. Mix until just combined. 5. Spray a 10 inch Bundt pan with non-stick cooking spray, or grease with butter and flour. Pour batter into prepared pan. 6.Bake at 350º for 45-55 minutes or until a toothpick inserted comes out clean. Cover loosely with foil last 10 minutes if needed to prevent excess browning. 7 Remove from oven and cool in the pan on a wire rack for 30 minutes. Then invert the cake onto a wire rack to finish cooling
Glaze: 1. Add powdered sugar melted butter and lemon juice to small bowl and m ix till combined. Add more sugar or liquid as needed to make thin glaze. 2. Pour glaze evenly over top of glaze and allow to harden for 15 minutes. 3. Slice and enjoy!!!! |

Notes: Congratulations Margo! I hope that you have a wonderful experience at college with teachers that inspire you and new friends that bring out the best in you. You have so much going for you which means much will be asked of you. As you know, the world is a beautiful and terrible place. So you must choose over and over to live a life not governed by fear or apathy. Instead choose growth and challenge over security and the status quo. Be willing to embrace the dangers/discomforts of your own personal journey and yes, there should be at the least, major discomforts. Don't worry about finding the right answers, instead keep asking questions, just like you did when you were little. I am so excited for you, Margo, and know that you will be in my thoughts everyday.
