2 tbsp. Butter
2 tbsp. Flour
1 medium diced onion
1 chopped bell pepper
2 tsp Garlic powder
1 tsp Tony Chachere's(more or less to Taste)
⅛ tsp pepper
1 c water or broth
1 lb. cooked sausage
1 lb. diced cooked chicken
1 quart of canned tomatoes
or
1 can diced tomatoes and 1 tbsp. tomato paste

Directions:

Prep all ingredients dicing peppers, and onions, and chopping sausage, and chicken.
Cook rice.
Melt butter on medium high heat in large pan or pot. add flour and whisk until its a light brown color(3-5 min).
Add onions, bell peppers, garlic, and cook till soften(5-6 min).
Add seasonings and 1 c of broth or water. Stir for 1 min
Add tomatoes, sausage and chicken back to pot and simmer uncovered for 10 minutes.

Serve over rice with crackers or cornbread

This can be prepped and left in a crockpot on low to simmer by adding another cup of broth
