3 egg yolks
1 T. freshly squeezed lemon juice
1 tsp. Dijon mustard
1/4 tsp. salt
pinch of cayenne pepper
1/2 c. unsalted butter, melted

Directions:
Directions:
In a saucepan, melt butter until it’s hot, but do not brown (butter needs to be HOT, not just melted - recipe will not emulsify if butter is just warm). Add egg yolks, lemon juice, Dijon mustard, salt and cayenne pepper; put in blender and blend on High for about 5 seconds until combined. With blender running on medium-high, slowly add the hot butter into the mixture until emulsified. Pour sauce into a small bowl and serve warm.
