1 c. butter, softened
1 c. light brown sugar, firmly packed
1 T. grated lemon peel
4 large eggs
1/4 c. freshly squeezed lemon juice
3 c. all-purpose flour
3/4 tsp. salt
1/2 tsp. baking soda
1 c. chopped pecans

Directions:
Directions:
Preheat oven to 350ºF. Grease and flour two 9x5x3-inch loaf pans. In a large bowl, with electric mixer at medium speed, beat butter and sugar until light and fluffy. Beat in lemon peel. Add eggs, one at a time, beating well after each addition. Beat in milk and lemon juice. In a separate medium size bowl, combine flour, salt and baking soda. With mixer at low speed, beat flour mixture into batter until just blended. Fold in pecans. Pour batter into prepared pans. Bake 40 to 45 minutes, or until toothpick inserted in center comes out clean. Remove from pans on wire rack to cool.
