2 c sugar
1 stick butter
c Crisco Shortening
5 eggs (separated)
2 c flour
1 c buttermilk
7 oz coconut flakes


Filling:
8 oz cream cheese
1 stick butter
3.5 c powdered sugar
1 tsp vanilla
1 cup chopped pecans

Directions:
Directions:
Mix together sugar, butter and Crisco
Add vanilla then egg yolks one at a time
Add buttermilk
Mix all dry ingredients in 2nd bowl, then mix slowly into wet ingredients
Beat egg whites until you get stiff peaks, then fold into batter, do not overmix
Pour into 3 greased and floured 8" pans
Bake 25 min at 350

Filling:
Mix together cream cheese, butter and vanilla
Add powdered sugar about a cup at a time
Add chopped nuts
