2 tablespoons of butter
750ml of milk
50g of flour
150g of grated cheese of your choice (there is so such thing as too much cheese)

350g of macaroni pasta

boil the pasta in a large pot of water and cook til aldente

To make the sauce, melt the butter in a pot on medium heat, add flour and cook, stirring constantly, for 1 minute.

Add half the milk to make a thick sauce and constantly mix until there are no more lumps. A whisk is very helpful for doing this

Once there are no more lumps, add the rest of the milk and mix it in.
simmer for 5 mins until fully thickened

At this point, add the cheese, mustard, a pinch of slat and pepper to taste and any other seasoning you want (chopped bacon bits never go wrong)

mix until everything is incorporated

Add the cooked pasta to the sauce and serve
 

Breaded Mac and Cheese Bites

Mac and Cheese

panco bread crumbs
flour
2 eggs, beaten

Oil for deep frying

Take the Mac and cheese, place in a rectangular container and chill so that you have a firm block. (about 45 mins)

Cut chilled macaroni and cheese into squares,

Into a skillet, begin heating enough oil to cover half the height of the squares on a medium to high heat

Coat the bites with flour, then dip in eggs, then coat with bread crumbs.

Put the bites in the hot oil and cook for about 2-3 mins on each side until they are nice and golden

Drain the on a wire rack and serve.
