Ingredients: 1 pkg (3 oz.) each Lime and Raspberry Jello 1 jar (15 oz.) applesauce 18 double graham crackers 1 container cool whip 3 T powdered sugar ¼ tsp Almond extract

Directions: |
Directions:Place lime and raspberry flavor gelatins in separate bowls. Add ¾ cup applesauce to each flavor and stir until thoroughly blended. Place 2 double crackers end to end on a platter. (you are building a loaf). Spread with ¼ cup lime gelatin mixture. Top with a layer of crackers and spread with ¼ cup raspberry gelatin mixture. Repeat layers ending with crackers. Mix the defrosted cool whip with 3 Tablespoons of powdered sugar and the almond extract and spread over the top and sides of loaf. Chill at least 30 minutes. Makes 12 to 14 servings. |

Notes: This was a friend of mom's back in the 1950s. She actually had a restaurant at one time, a catering business I think on Airline Hwy. This recipe was typical of 1950s dessert, it was the time of Jello aspics and cream cheese frosted sandwich loaves.
The fact that it uses graham crackers as the base interests me. There are desserts today that have you build up a dessert with graham crackers, then a layer of pudding and cool whip and another layer of graham crackers, etc. The Graham crackers break down with the moisture of the pudding and become more cake like but without baking. In the 1950s if you were cooking you wore an apron, and once company arrived you switched to either a clean apron or a fancy one. My mom had several half aprons for entertaining at home.
