1/2 c half & half cream
1/4 c Dijon mustard
1 T brown sugar
4 boneless, skinless chicken breasts
1/4 t salt
1/4 t pepper
2 t olive oil
2 t butter
1 small onion, thinly sliced

Directions:
Directions:
Stir together the cream, mustard and brown sugar. Heat oil and butter in a large skillet and brown the chicken on both sides. (Can use a mallet on the chicken to make it a more even thickness.) Pour on the cream mixture and onions. Bring to a boil, then reduce to a simmer until done. Cover the pan while simmering.

I had very large chicken breasts, so doubled the cream, etc. I would also add a thickener to the sauce when it was done. Then I served with cooked noodles - or rice would be good also.
