3/4 C Sugar
1/4 C Packed Brown Sugar
3 T All-Purpose Flour
2 tsp Ground Cinnamon
1/4 tsp Ground Nutmeg
7-8 C Sliced, Peeled Apples
1 T Lemon Juice
Pastry for Double-crust Pie (9 inches)
1 T Butter
1 Egg White
Additional Sugar

Directions:
Directions:
In a small bowl, combine sugars, flour and spices; set aside. In a large bowl, toss apples with lemon juice. Add sugar mixture; toss well to coat. Line a 9-inch pie pan with half the pastry. Place apple filling into crust; dab with butter. Top with remaining pastry. Place apple filling into crust; dab with butter. Top with remaining pastry; flute edges and cut slits in top. Beat the egg white until foamy; brush over pastry. Sprinkle sugar on top. Bake 375 F for 35 minutes. Increase temperature to 400 and bake 10-15 minutes more or until golden.
