2 baked pieshells
2 bananas
shaved bitter chocolate

1/2 c sugar
1 T cornstarch
2 cups scalded milk
4 beaten egg yolks

1 tsp vanilla
6 oz chocolate chips
1 envelope gelatin
1/4 c cold water
4 egg whites
1/2 c sugar

Directions:
Directions:
Scald milk
Beat the egg yolks
Combine the sugar and cornstarch

In the top of a double boiler over hot (not boiling) water, place the scalded milk and SLOWLY whisk in the beaten yolks
Then stir in sugar mixture and cook until the custard coats a spoon
Remove from heat and add the vanilla

To HALF the custard add the chocolate chips and stir until melted
Pour this chocolate custard into bottoms of the two baked pie shells
CHILL

Soften the gelatin in the cold water, then add to the remaining custard
Stir until dissolved
Chill until slightly thick
Beat the egg whites until soft pillars form
Gradually beat in the sugar, then fold into the custard
Pour into pies over the set chocolate custard
Slice bananas lengthwise and arrange on tops of pies
Shave bitter chocolate over pies

note: My mother often made these pies and took them to picnics and holiday dinners to everyone's delight
