Ingredients: 1 yellow bell pepper, sliced thin... 1 red bell pepper, sliced thin... 1 leek, sliced thin... 1garlic clove, sliced thin... 1red onion, sliced thin... 1 white onion, sliced thin... 1 zucchini, sliced thin... 1/4 cup good olive oil... 1 t dried thyme... Salt & pepper, to taste... 1 1/2 pounds of steelhead trout filet... 4 T of real butter...

Directions:Preheat oven to 400º... Line a large baking sheet pan with heavy duty foil, leaving enough foil to over lap baking sheet and able to enclose veggies and fish, you will seal this and the veggies and fish will steam.... Be sure you can tightly seal the foil.... Add veggies to the baking sheet, spread them out season them with olive oil, thyme, and S & P... Now toss the veggies and get all coated with the spices and olive oil, spread out the veggies once again.... Now seal the foil and bake in oven exactly 12 minutes... Take out of oven, unseal packet of veggies, place the trout on the veggies, dot the trout with the 4 T of butter.... Reseal the packet and place back in oven for 13 minutes, no longer than 13 minutes!
Unseal packet and serve fish with veggies... My! |
