1 whole chicken, about 2-1/2 lbs.
salt and pepper to taste
4 garlic cloves, peeled
1 T. vegetable oil
4 med. new potatoes, pared
4 med. carrots, pared
4 med. onions, peeled

Directions:
Directions:
With paper towels, pat dry the surface of the chicken and inside cavity; sprinkle inside and out with salt and pepper. Drop garlic cloves into chicken cavity. Cut potatoes, carrots and onions into quarters. Choose a casserole dish large enough for chicken and vegetables to just fit; swirl oil around to coat casserole dish; add chicken and arrange vegetables around it. Cover and bake in a preheated 350 degree oven until chicken and vegetables are very tender, about 1-1/2 hours. Chicken will not be brown.
