2 Tablespoons vegetable oil
1 yellow onion chopped
3 garlic cloves minced
29 oz. canned black beans, drained and rinsed well
2 c. water
1 bay leaf
1 tsp. kosher salt
1 tsp. chipotle chili powder (this is hot--start with 1/4t.)
1 tsp. cumin
1/2 tsp. coarse black pepper
1/2 tsp. dried oregano
2 Tbsp. lemon juice
2 Tbsp. lime juice

Directions:
Directions:
Add the oil to a large dutch oven on medium heat along with the onions and cook for 4-5 minutes stirring occasionally until translucent before adding in the garlic and cooking an additional 30 seconds.

Add in the beans, water, bay leaf, salt, chili powder, cumin, pepper and oregano and bring to a boil then reduce to a simmer and cook for 30 minutes until thickened.

Remove the bay leaf, add in the lemon and lime juice and serve.
