Ingredients: 1½ c brown sugar 1½ c white sugar 1 c evaporated milk 1½ tsp vanilla 1 lb. shelled pecans (you can keep as many of these in halves or choose to break up a few) ¼ lb. butter or margarine (this would be one stick)

Directions:Put several layers of newspapers on your table or counter surface. Cover the newspapers with wax paper. I have always found that newspaper under the wax paper helps.
In a heavy saucepan, mix together all ingredients. Bring to boil, stirring. Continue stirring and cooking until soft ball forms when dropped in cold water (if you have an instant read thermometer this is 235º Remove pan from heat and let it begin to cool and beat slowly until it loses it's shiny gloss. Once it begins to lose it's gloss drop on waxed paper by heaping tablespoonsful. Let cool and remove from waxed paper. |

Notes: When we lived up in Shreveport we got some of the finest pecans at the LSU Ag place. It was just down the road from us on Hwy 1. The neighborhood we lived in had plenty of mature pecan trees, in fact it had at one time been a pecan orchard. That's one thing I liked about living up there, you could see cotton fields and pecan orchards.
