Mac & Cheese (I use Daiya mac and shells with bacon bits. If you are using Daiya, add
some Nutritional Yeast for a cheesier taste)
Bacon Bits (if your mac & cheese doesn't include bacon bits)
4 bean chili (or regular chili) (leftover or store-bought)
red onion, chopped
lettuce, chopped
tomatoes, chopped
scallions, chopped
jalapenos, chopped or sliced
Tortilla chips
Ranch dressing or Buffalo Cheese sauce

Directions:
Directions:
Make the mac and cheese. If you don't care for raw onions, cook the chopped onions. Heat the chili.
Put a layer of chips on a plate or in a bowl and top with mac and cheese and chili. Add the on onions, lettuce, tomatoes, jalapenos (optional), scallions and top with your choice of ranch dressing or buffalo cheese sauce. Sprinkle bacon bits on top and serve.
