Country Fried Steak Recipe

4 cube steaks
2 cups buttermilk
3 large eggs
2 tsp hot sauce
1 tsp Worcestershire sauce
1 cup flour
1/2 cup cornstarch
2 tsp salt
1 tsp garlic powder
1/2 tsp pepper
1/4 tsp cayenne
4-5 cups oil for frying

GRAVY:
1/4 cup finely chopped shallots or onions
1 tsp minced garlic
3 T flour
1/2 cup milk
1 1/2 cups chicken or beef broth
Pinch cayenne
Salt and pepper to taste

OPTIONAL GARNISH: pepper and parsley

STEAK:
In a large bowl, whisk together buttermilk, eggs, hot sauce and Worcestershire sauce.

To another bowl, whisk together flour, cornstarch, salt, garlic powder, pepper and cayenne.

Submerge steaks into buttermilk mixture. Then dip into flour mixture, coating both sides. Then back into buttermilk mixture, then back into flour mixture. Place on a baking sheet and refrigerate for 15 minutes.

Add oil to a cast iron skillet or frying pan and preheat oven to 250º.

Once oil is hot, fry each steak on each side until golden brown. Drain on paper towels, then place on parchment covered baking sheets and put in the oven while making the gravy.

GRAVY:
Add 1/4 cup of the oil from frying pan to a sauté pan over medium heat.

Add in shallots or onions, and garlic and cook for 2 minutes while stirring.

Next stir in flour and cook to create a roux. Cook until browned, but not burned!

Stir in milk and stock and turn up to a med-high heat until boiling, then turn down to med low and allow to thicken.

Turn off heat. Spoon gravy over top of steaks. Serve with mashed potatoes.
