2 c flour
2 large eggs, whisked
2 tsp vanilla
2 tbsp baking powder
3/4 c sugar
1 tsp grated lemon zest
1/4 tsp salt
2/3 c vegetable oil
Directions:
Directions:
Mix dry ingredients and stir into whisked eggs. Chill covered for 30 minutes or longer. Drop by round teaspoon 2 inches apart on ungreased cookie sheet. Mist bottom of 3 inch flat bottom glass with water and dip glass bottom in sugar and press the top of each cookie. Mist and sugar in between each cookie. Bake 400 until light brown - 8 minutes. Cool on sheet for 2 minutes before removing.
