1 lb flank steak
1/4 c cornstarch
3/4 c vegetable oil
2 scallions, chopped on the diagonal into 1-inch pieces

Sauce:
1/4 c soy sauce
1/2 c brown sugar, packed
3 cloves garlic, minced
2 tsp fresh ginger, grated
2 tsp sesame oil
sesame seeds, for serving, garnish

Directions:

In a small bowl, whisk together the soy sauce, brown sugar, and 1/2 c water.

Transfer to a medium saucepan and cook until slightly thickened, about 10 minutes. Remove from heat.

In a large bowl, toss flank steak with cornstarch, coat evenly and shake off excess.

Heat vegetable oil in large pan over medium-high heat. Add beef in batches and cook until brown and crispy, flipping pieces over as needed, 2-3 minutes.

Transfer beef to a paper towel lined plate and discard excess oil.

Add beef and sauce back into the pan over medium heat and cook until sauce has thickened, 2-3 minutes.

Stir in scallions, garnish with sesame seeds, and serve immediately
