1 c. unsalted butter, softened
1-1/2 c.granulated white sugar
1 c. light brown sugar
4 large eggs, at room temperature
1 T. vanilla extract
3 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1-1/4 c. milk

Preheat oven to 350ºF. Butter and flour three 9-inch round cake pans. Beat butter on medium speed until creamy. Add sugars; beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla extract; mix well.

Sift together flour, baking powder, baking soda and salt. Add 1/4 of flour mixture to batter and combine. Then, add 1/3 of milk and combine. Repeat, adding flour and milk alternately until all ingredients are incorporated. Divide batter evenly into prepared pans and place in oven. Bake for 30 to 35 minutes or until center bounces back when gently pressed, or an inserted toothpick comes out clean. Let stand for 10 minutes before removing from pan. Cool on wire rack.
 

Buttercream Pecan Frosting:

2/3 c. unsalted butter, softened
6 c. powdered sugar
1/2 c. heavy cream
2 tsp. vanilla extract
1/8 tsp. salt
4 c. chopped pecans
1 chocolate bar (optional)

Directions:
Directions:
Cream butter until light and fluffy. Add 1 cup powdered sugar and beat until well combined. Gradually add remaining powdered sugar, alternating with heavy cream. Beat until creamy. Add vanilla and salt, mix well, stir in pecans. Spread frosting evenly between layers and over sides and top of cake. If desired, use chocolate bar to decorate with chocolate shavings or curls. Use cheese grater to make shavings or vegetable peeler to make curls.
