1-2 T olive or avocado oil
1 onion chopped
3 stalks celery chopped
1 lb carrots chopped
2 large sweet potatoes peeled and cut into large chunks
Optional: 2 yukon gold potatoes cut into chunks
1 ring smoked beef sausage (We like uncured) sliced or diced
1 bag chopped kale
6-8 cups of chicken or vegetable broth
salt + pepper to taste

**There is no formal recipe for this soup so just eyeball it to see if you need more carrots or if a whole bag of kale is too much.

Heat dutch oven or large stock pot over medium heat with oil of choice. Once hot, add onion, celery and carrots for about 5 minutes. Add the remaining ingredients and bring to a boil. Simmer for approximately 15 minutes or until vegetables are tender. Make sure not to overcook the sweet potatoes or they will fall apart.

This is a recipe I have been making for years and it remains a favorite of Johnny and James. I've never written down a recipe for this and just add everything by eye so feel free to play around with it.
