3 medium eggplant, baked, covered in oven until tender (peel and mash with potato masher)
2 cloves garlic, chopped fine
2 Tbsp Olive Oil
2 Tbsp Lemon Juice
2 Tbsp Tahini (ground sesame paste)
32 oz container plain Greek yogurt

Use blender if you like for all EXCEPT the eggplant (it will puree it too fine and you lose the desirable lumpy texture in this dip). Chill and serve like or with hummus: with pita chunks, fresh veggies.
