Saute in olive oil and cool:
1 can artichoke hearts IN WATER
1 clove garlic (crushed)

Mix together in bowl:
3 eggs, salt and pepper to taste
8 oz grated Mozzarella
1/2 c. grated or shredded Romano or Parmesan

Pour into small to medium pie crust
Bake at 350ºF for 45-60 minutes until set and slightly browned on top
