2 racks lamb - aprox 16 ribs
2 tsp olive oil
2 T fresh garlic, minced
2 T fresh ginger, grated
1 ½ tsp thyme leaves
⅓ cup apricot jam
1-2 T lime juice

Couscous
¾ cup water
284 ml /10 oz chicken broth
1 cup couscous
1 roma tomato
2 T salsa
cilantro

Directions:

Oven 425º
Spray non-stick on baking dish or pan
Place lamb bone side down and drizzle with olive oil. Combine garlic, ginger, thyme and apricot jam and spread over lamb. Drizzle with lime juice. Bake for 25 minutes.

Couscous
Boil couscous in chicken broth. remove from heat and add chopped tomato, salsa and cilantro.

Serve with asparagus or other sides.
