1 pkg.(8 oz.) manicotti noodles
1 lb. hamburger
½ cup chopped onion
1 container of cottage cheese
2 cups shredded mozzarella cheese
1 cup shredded provolone cheese
⅓ cup grated parmesan cheese
1 egg
1 jar of favorite spaghetti sauce

Cook pasta for 5 min. In a large skillet brown hamburger with onions. Pour spaghetti sauce in with hamburger. In a bowl mix cottage cheese, 1 cup mozzarella cheese, provolone cheese, parmesan cheese and egg and mix well. In a 9X13 in greased pan, spread half the sauce. Stuff cheese mixture into the manicotti noodles and arrange in pan. Spoon remaining sauce over the top of manicotti. Cover and Bake at 350º for 35 min. Uncover and top with remaining 1 cup mozzarella cheese. Bake 5 min. longer.
TIPS FOR STUFFING MANICOTTI NOODLES--Cook shells in boiling salted water with a tsp. of olive oil for 5min. only! After 5 min. scoop out shells and run quickly in cold water. Spread onto a paper towel then lay back into the slotted holder they came in (so they don't stick together). Place a gal size baggy into a tall glass for stability. Then spoon cheese mixture into bag. snip off tip of corner of bag, enough so that the filling squeezes through with ease into the pasta hole. Pick up pasta tube and tip it on an angle and with your bag start piping the cheese mix in as far as it goes, if it doesn't reach the other end just flip to that side and fill it up.
