⅓ c. softened butter
1 c. sugar
2 T. finely grated lemon zest
2 lg. eggs
½ c. buttermilk
½ tsp. almond extract
1½ c. all-purpose flour
1 tsp. baking powder
1 tsp. salt
½ c. chopped nuts or 1 T. poppyseeds (optional)

Glaze: ¼ c. superfine sugar
4 T. fresh lemon juice

Grease and flour a loaf pan. Preheat oven to 350º F.

Combine flour, baking powder and salt in small bowl and set aside.

Add lemon zest to sugar and mix with fingers until it looks like wet sand. Beat butter and sugar until very well mixed. Beat in eggs, almond extract and milk. Remove bowl from mixer. Add flour mixture and stir with a wooden spoon until just combined. Fold in nuts or poppyseeds, if using.

Pour into prepared pan and bake at 325º F. for about 70 minutes or until toothpick inserted in center comes out clean.

Meanwhile, combine ¼ c. sugar & lemon juice and stir well until sugar is melted.
After removing cake from oven, immediately spoon lemon juice mixture over hot cake. Cool 10 minutes then remove from pan and place on rack to cool.
