1 lb ground beef
1 cup chopped fresh onion
1 large carrot cut in thin 1" strips
1 cup chopped celery
2 tsp minced garlic
2 15 oz cans diced tomatoes
1 15 oz can red kidney beans w/liquid
1 15 oz can great northern white beans w/liquid
1 quart tomato juice
1 tbsp vinegar
1 1/2 tsp salt
1 tsp oregano
1 tsp basil
1/2 tsp pepper
1/2 tsp thyme
8 oz ditalini pasta

Directions:
Directions:
Brown ground beef over medium heat. Add onion, carrot, celery, garlic and sauté for 10 minutes. Add remaining ingredients except pasta and bring to a boil. Reduce heat to low and simmer for one hour. About 45 minutes into the simmering, cook pasta in 2 quarts of boiling water for 8-10 minutes until al dente and drain. Add pasta to the pot of soup and continue to simmer for 5-10 minutes more.
