1 courgette, finely chopped
1 can of corn, drained
225g of grated cheddar
Flour tortillas

Directions:

In a bowl mix the cheese, corn and finely chopped courgette

Add the mix to a tortilla and top with more cheese( there is no such thing as too much cheese)

Press down a little bit on the tortilla to press everything together so your veggies don’t fall out when you flip your tortilla. Fold in half and place in a skillet over medium heat with some vegetable oil.

Flip after 2 min, when it’s golden brown and then cook the other side another 2 mins

Remove from heat, slice up and serve
