24 wonton wrappers
a drizzle of canola or olive oil
1 small onion, chopped
2 garlic cloves, minced
1 Tbsp grated ginger
2 cups chopped cooked chicken or turkey
1 Tbsp curry paste
½ cup light coconut milk or evaporated 2 percent
⅓ cup mango or peach chutney (or fresh mango)
1 T fresh lime juice
pinch salt
chopped fresh cilantro

1. Oven 350º. Press wonton wrappers in mini muffin cups, pressing any folds firmly to the sides. Bake for -10 minutes until golden. Cool.
2. Filling. Sautee onion, add garlic and ginger and cook 1 minute. Add chicken, curry, coconut milk, chutney lime juice and salt. Cook stirring until bubbly and thicked. Cool slightly or chill before filling. Top with cilantro.
