1 cup butter
2 tablespoons lemon juice
1 teaspoon lemon zest (optional)
4 cups (approximately 1 pound) confectioners sugar
Additional lemon juice or milk
Gel food coloring

Directions:
Directions:
In an electric mixer, cream shortening and butter until light and fluffy. Add lemon juice and zest (if using); beat well. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, if frosting is dry, add additional juice or milk and beat at medium speed until light and fluffy.

Keep covered with a damp cloth until ready to use. For best results, store in the refrigerator when not in use. Re-whip before using.

This buttercream should be stored in an airtight container and can be frozen for up to 6 weeks. If you plan to use this in a piping bag with a tip, make sure not to include the lemon zest as it will clog the piping tip.
