4 cups cooked grain (bulgur, farro, barley, or quinoa)
1 cucumber, peeled, seeded, and chopped
1 cup grape tomatoes or halved cherry tomatoes
1 can (15 ounces) onions, sliced

Place all salad ingredients into a large bowl. Toss.
 

Dressing


Ingredients:  
Ingredients:  
1 lemon, juiced
1 orange, juiced
¼ cup olive or avocado oil
1 tablespoon agave or honey
2 teaspoon cumin
1 teaspoon cinnamon
1 teaspoon onion powder
1 teaspoon smoked paprika
½ teaspoon garlic powder or 1 pressed garlic clove
Salt and pepper to taste

Directions:
Directions:
In a separate bowl, add all the dressing ingredients. Whisk or blend until the oil is thoroughly incorporated. Adjust seasoning to taste.

Pour the dressing over the salad. Mix. Salad will taste better on the second day. Serve on its own or with goat cheese.
