4 tablespoons unsalted butter
1 onion, diced
¼ cup flour
2 teaspoon roasted garlic paste
5 cups broth
1 pound Yukon gold or baby red potatoes, cubed into ½-inch pieces
¼ teaspoon thyme
¼ teaspoon smoked paprika
Chipotle tabasco to taste
Freshly grated nutmeg
Salt
Pepper, to taste
1 cup half and half or heavy cream

Directions:
Directions:
Melt butter in a large heavy bottomed pan. Add diced onions and cook about 5 minutes, until soft and translucent. Add garlic and flour and cook about 1 minute, stirring often.

Continue whisking, and slowly add broth, stirring to incorporate into the roux. Increase heat to medium-high. Add in potatoes, thyme, smoked paprika, nutmeg, tabasco, and salt, and pepper. Adjust seasoning to taste.

Stir and bring to a low boil, then reduce heat to medium-low and simmer. Simmer, stirring every so often, for 15 to 20 minutes, until potatoes are fork tender.

Add in half and half. Stir in and heat through. At this point, add corn, clams, broccoli, sautéed mushrooms, or cooked chicken to make all types of chowder.

Serve sprinkled with chives, cooked bacon, ham, cheese, or crunchy onions.
