1 cup (220 grams) butter
2 ⅓ cups (310 grams) flour
¾ cup (110 grams) confectioners sugar

1 tablespoon vanilla sugar
Zest from 1 lemon

Confectioners sugar for sprinkling

Directions:
Directions:
Cut the cold butter into small pieces and quickly crumble with the flour. Add sugar, egg, vanilla sugar, and lemon zest and quickly mix into a smooth dough. Wrap in plastic wrap, and refrigerate until firm, about 1 hour.

Then roll out the dough about ⅛-inch (3-millimeter) thick and cut out the slices with a serrated cutter. Cut holes into half of the slices (use special cutter or small biscuit cutter). Place the slices on the baking tray and bake in a preheated oven at 392°F (200°C) for about 10 minutes until golden brown.

After baking, coat the bottoms with jam, place the tops, and sprinkle with confectioners sugar.
