1.5 cups pistachios
2 large egg whites
4 boneless skinless chicken breasts
¼ tsp salt
¼ tsp freshly ground black pepper
oil for the pan
chopped fresh basil (optional)

1. Preheat oven to 400º
2. Place pistachios in food processor. Process until finely chopped: transfer to shallow bowl. Place egg whites in a shallow bowl. Sprinkle chicken with salt and pepper. Dip chicken into egg whites: dredge in pistachios, pressing lightly to adhere.
3. Heat a large oven proof skillet over medium high heat (I used my cast iron pan). Add oil to pan and then add chicken to pan and cook for 4 minutes. Turn chicken over and add a bit more oil if needed. cook another 4 minutes
4. Place pan in oven. Bake uncovered at 400º for 14 minutes or until chicken is done (internal temperature of 165). Garnish with chopped basil if desired.

We made this in combination with Asparagus with Lemon Basil Yogurt Sauce and used the sauce as a condiment to the chicken. Really good. Tsatsiki would be good too and probably don't need anything. The third item we served was Pan Roasted Tomatoes with Herbs The combo of these 3 things on a plate was really nice.
