2 tbsp. Olive oil
2 tbsp. Fajita seasoning
3 chicken breasts
1 red pepper
1 green pepper
1 onion
1 cup cheddar cheese
8 flour tortillas
Optional toppings: sour cream, salsa, guacamole
Directions:
Directions:
Slice onion and pepper into thin slices. Cut chicken into bite sizes pieces or slices and place into a bowl with 1 tablespoon of fajita seasoning. In a large skillet, heat 1 tablespoon olive oil and add chicken. Cook until fully cooked. In another skillet add 1 tablespoon olive oil and sauté vegetables. Add 1 tablespoon fajita seasoning and mix in. Spray pan to cook quesadillas, place tortilla in pan, top with chicken, vegetables and cheese add another tortilla on top. Flip to cook both sides.
