2 eggs
2 Tbsp. water or milk
salt and pepper to taste
1/2 Tbsp. butter for pan
Optional toppings: ham, bacon, green pepper, onions, mushroom, shredded cheese, etc.

Directions:
Beat together eggs, water/milk, salt and pepper. In a 7-10" skillet over medium heat melt better. Pour in egg mixture. With an inverted turner, carefully push cooked portions at edges toward center so uncooked portions can reach hot pan surface, tilting pan and moving cooked portions as necessary. When top is a little moist fill with desired ingredients on one side and fold omelet in half.
