2 1/2 lb. extra lean ground beef
3 c. sliced carrots
3 c. potatoes, peeled and diced
1 1/2 c. onions, diced
3 c. celery, sliced
1 1/2 tsp. minced garlic or equivalent
6 - 14.5 oz. cans chicken broth
60 oz. tomato juice, approximately
1 1/2 tsp. thyme
1 1/2 tsp. salt
1 1/2 tsp. pepper
10 oz. wide egg noodles
chopped parsley

Directions:
Directions:
In a large kettle, cook ground beef, breaking up meat as it browns, over medium-high heat until browned. Drain.
Add carrots, onions, potatoes, celery and garlic and stir into meat.
Add chicken broth, tomato juice, thyme, salt and pepper.
Cook until vegetables are tender.
Add cooked noodles and heat well.

Makes approximately 4 qt. of soup.
