1 C chopped onion
1 C. chopped celery
! C. chopped carrots
1/2 C. butter
1/2 C. flour
2 C. chicken broth
1 C. milk
2 C. cooked, chopped chicken
1 C. peas, thawed
1 t. salt
1/2 t. pepper
4 unbaked pie crusts

Directions:
Directions:
Saute first 4 ingredients for 5-10 minutes.
Add flour, stir until smooth, cook 1 minute, stir constantly.
Add broth, milk, cook until thickens and bubbly, about 10-15 minutes.
Stir in chicken and peas.

Cool before filling crust, VERY important to cool.

Put bottom crust, fill, put top crust on, put slices on top, fold edges under crimp.

Cover with foil, label and freeze.

You can freeze the sauce and put in crust later.
Bake at 350, bake uncovered for 30 minutes, then cover with foil and bake and bake for another 30 minutes. let rest 10 minutes before cutting.
