3-4 lbs. pork loin roast
1 cup brown sugar
1 bottle red taco sauce, (not chunky salsa)
1 tbsp. cumin
1 20 oz. bottle of Coke

Directions:
Directions:
Cook pork on low for 6 hours in crockpot (I never add anything to it expect salt and pepper. Adding water takes the flavor out). Then the last 3 hours before serving, pull the pork and add everything else.

To make Cafe Rio Salad, you need to chop up Romaine lettuce,( figure 2 cups per person, one head makes approximately 5 cups.). Prepare, Lime Rice, Creamy Cilantro Dressing and Pico De Gallo, recipes are included in this recipe book. Layer salad with flour tortilla, lime rice, canned black beans or pinto bean (rinsed well), romain lettuce, sweet pork, guacamole, Pico de Gallo, top with tortilla strips, lime wedges, and cilantro creamy dressing.

For Ryan Bennion's wedding luncheon Grandma B. helped make the sweet pork, that was served as part of the Cafe Rio Salad. It filled her big electric roaster to the brim and there was quite a crowd that she helped feed.
