Ingredients: ½ pound butter, room temperature 1 c. sugar 2 eggs 1½ c. flour ¼ tsp nutmeg 1½ tsp cinnamon 1 tsp baking soda ¼ tsp salt 3 medium tart apples, peeled and chopped ¾ c. chopped pecans 1 tsp vanilla
Sauce: 4 TBSP butter 1 c. firmly packed dark brown sugar 1 c. heavy cream ½ c. chopped pecans

Directions:Preheat oven to 350º. Grease a 9x13 inch baking pan. With an electric mixer, beat butter and sugar until light and fluffy. Add eggs followed by flour, spices, baking soda and salt. Increase to medium speed and beat for 30 seconds or until well mixed. Add apples, nuts and vanilla; stir until incorporate. Pour batter into prepared pan and bake for 25-30 minutes.
For sauce: Melt the butter in saucepan. Add pecans and cook over medium-low heat until pecans are toasted and butter is lightly browned. Add brown sugar and heavy cream and cook stirring constantly until sauce boils and sugar dissolves. Sauce will thicken as it cools. Serve on a square of cake topped with ice cream if desired. |

Notes: When on a trip to the Outer Banks (2002) while we lived in Northern Virginia I picked up a cookbook from a local restaurant. According to the note I made in the cookbook, I made this cake when Uncle Gary, Aunt Jenny and Grandma Fern came to visit us in Richmond January 3, 2008. I do remember the cake being delicious and Grandma Fern wearing her pink stocking cap and being chilly. Sure do miss her!
