1 onion chopped fine
1 clove garlic chopped fine
2 tbsp butter
1 1/2 lb mixed lean shoulder pork and veal chopped fine, not ground
2 tsp corn starch
3/4 c boiling pork stock or chicken consomme
1 tsp salt
1/2 tsp black pepper
1 tbsp crushed leaf sage or
1/2 tsp sage
1/4 tsp ground mace
1/8 tsp ground cloves
1/2 c finely chopped celery leaves
2 crust pir pastry, 9 inch
1/4 c fine bread crumbs
1 egg slightly beaten
1 tbsp water

Preheat oven to 425ºF. Saute onion and garlic in butter until limp. Add meat and continue to cook, stirring for 5 to 8 minutes or until meat is no longer pink. Sprinkle with corn starch. Add pork or chicken stock, salt, pepper, sage, mace, cloves and celery leaves. Bring to a boil and simmer uncovered until meat is well cooked and excess liquid is evaporated 20 to 25 min. Set aside to cool. Meanwhile, line 9 inch pie plate with 1/2 of pastry. Fill with cooled mixture after removing any surface fat. Sprinkle with bread crumbs. Top with pastry cover. Flute edge with thumb and index finger. Make hole in center for steam to escape. Brush with egg mixed with water. Bake in 400ºF oven until golden brown 10 to 15 min. Lower heat to 350ºF and bake for 15 min longer.
