1½ c. graham cracker crumbs (20 squares)
½ c. butter, melted
3 TBSP sugar
1 (8oz.) pkg cream cheese, softened
1 can sweetened condensed milk
¼ c. Key lime juice or regular lime juice
1 TBSP grated lime peel
Additional lime peel if desired

Heat oven to 350º. Grease bottom and sides of a 9-inch square pan with cooking spray. In small bowl, mix cracker crumbs, butter and sugar with fork. Press evenly in bottom of pan. Refrigerate while preparing cream cheese mixture. Beat cream cheese with electric mixer until light and fluffy. Gradually beat in milk until smooth. Beat in lime juice and lime peel. Spread over layer in pan. Bake about 35 minutes or until center is set. Cool at least 3 hours until chilled. Garnish with additional lime peel if desired. Store in refrigerator.

This is excellent with homemade blackberry jam drizzled on top like I served on the 4th of July in 2006. Savannah...remember when we picked blackberries at Chesterfield Berry Farm and you were freaking out about those colorful beetles? Lol. Love you!
