1 c. Butter, softened
1 c. Sugar
1 c. Brown Sugar
2 Eggs
1 tsp. Vanilla
1 c. Pumpkin Puree
3 c. Flour
2 tsp. Baking Soda
½ tsp. Salt
1½ tsp. Cinnamon
½ tsp. Ginger
¼ tsp. Nutmeg
2 c. Milk Chocolate Chips

Directions:

Heat oven to 350º. Spray cookie sheets, or line with parchment paper.
Using a mixer, beat the butter until smooth. Add white and brown sugars, mixing until light and fluffy. Add eggs one at a time, then add the vanilla and pumpkin puree. In a separate bowl, mix flour, baking soda, salt, cinnamon, ginger and nutmeg together. Slowly add the flour mixture to the wet mixture. Mix until just incorporated. Stir in the chips by hand. Scoop cookie dough onto prepared cookie sheets. Bake 15-20 minutes. Cookies will be browned around the edges. Let set on cookie sheet for 2 minutes before removing to a wire rack.
