1 (2-3 lb) salmon fillet
1/4 - 1/2 c chopped, fresh scallops
1 large sweet onion, peeled and chopped
2 medium yellow squash, diced
1 medium zucchini, diced
1 lb small red potatoes, quartered
1/2 c mayonnaise
2 tsp lemon juice
Salt and freshly ground pepper to taste
Chopped fresh parsley, for garnish

Directions:

Preheat grill to medium heat.
Arrange salmon fillet, skin side down, on a sheet of heavy duty aluminum foil large enough to wrap the fillet, scallops, and vegetables. Arrange scallops, most of the onion slices, squash, zucchini, and potatoes around the salmon.
In a small bowl, combine the mayonnaise and lemon juice and spread over the top of the salmon. Place remaining onion slices over the top of the mayonnaise mixture.
Wrap the foil around the salmon and vegetables and seal.
Place on the grill grate and cook for 15 to 20 minutes depending on the thickness of the fillet, or until the flesh flakes easily with a fork.
Season with salt and pepper and garnish with the parsley to serve.

This was surprisingly good. The sauce tastes a lot like lemony tartar sauce. We all really enjoyed it... to the point that Jacob went around collecting everyone else’s extra sauce for his vegetables.
I added more lemon juice and put garlic salt and pepper on it before we grilled it in addition to a little bit afterward, too.
