Ingredients: 3 lbs lean ground beef 2 cups finely diced carrots 1 cup finely diced green bell pepper (optional) 14.5 oz canned diced tomatoes, undrained 12 cups reduced fat & sodium beef broth 2 tbsps tomato paste 4 cups assorted dried noodles, uncooked (use 3 different sizes, fine, kluski and wide)

Directions:In a large heavy pot with a lid, brown the ground beef over a medium high heat. Drain and return to the stove.
Stir the carrots, green pepper, and diced tomatoes with the juice into the cooked ground beef. Pour in the broth, and then stir in the tomato paste. Bring mixture to a boil.
Once boiling, stir in the noodles. Adjust heat to remain at a simmer. Cover and cook for 15 minutes, or until the noodles are tender, stirring occasionally and adjusting the heat as needed. |

Notes: I loved Noodles and Ground Beef soup as a child and my mom used to buy out the store of every can they had.....when Campbells discontinued this soup, it was before the internet.....but later in life, I decided to check around to see if this soup was just discontinued in this area and not completely. Well, unfortunately, Campbells stopped making this soup completely, but I found a great recipe which I am submitting here which tastes EXACTLY like the original.
