Ingredients: 8 oz. (1-1/2 cups) all purpose flour 1-1/2 tsp. baking powder 3 oz. butter (3/4 of a stick) 3 oz. sugar (1/3 cup) 1 egg 2 oz. (1/2 cup) currants, golden raisins, cranberries, or other dried fruit 5 T. (2-1/2 oz.) milk Demerara sugar, for sprinkling, optional

Directions:Preheat oven to 425°F. Line cookie sheets with silicone baking sheets or parchment paper. Sift the flour and baking powder and set aside. Cream the butter and sugar until creamy and smooth. Add the egg. Next, mix in the sifted flour mixture and milk. As it comes together, add the dried fruit. Mix just until combined. Do not over mix. With two forks, make "rock-like" cookies on the tray about 2" apart. They should not be smooth. Sprinkle with a little sugar and bake in the upper part of the oven for about 12 minutes. (It could range from 10 to 15 minutes, depending on your oven.). Remove from tray and place on cooling rack. When cool, enjoy the fruits of your labor. Makes 24 cookies. |

Notes: Rock Cakes (a Scottish recipe) are like a wet scone dough, filled with currants and baked as is. They are not rolled out as scones, and purposefully are made to look rough. They are very simple and easy to make and taste absolutely wonderful!
