1 lb. pea beans
4 pts. cold water
1 tsp. baking soda
1 sm. onion, chopped
1/2 lb. salt pork
1 tsp. dry mustard
2 T. molasses
1/2 tsp. salt
1/2 tsp. paprika

Directions:
Directions:
Wash and sort beans. Soak overnight in cold water. In morning, heat to boiling and add baking soda. Cook 20 minutes. Blow on beans and if they crack open they are done. Drain. Put in bean pot, stir in onion and press salt pork into the center. Mix mustard, molasses, salt and paprika and pour over beans. Cover and bake at 300ºF for 6 to 8 hours. Add water when necessary.
