COOKING THE FUDGE

Add ¾ cup Hershey’s cocoa, 3 cups granulated sugar, pinch salt, and the milks to a heavy saucepan.

Stir the mixture constantly over medium heat until it comes to a bubbling boil. This could take up to 5 minutes. Don't try and rush it. Once the candy comes to a boil. Continue to cook until the mixture reaches 234º on a candy thermometer. (soft ball stage) Probably 5 to 10 minutes. Remove the pot from the heat.

It will look dark and very shiny. Beat the fudge until it loses some of it's glossy shine. Add in a large spoonful of peanut butter and continue beating. Add in some more. She never measured how much peanut butter she adds but adds 3 big spoonsful and says it could be close to one cup.

Once it has lost most of it's shiny look pour into buttered dish. Let cool for 1 hour if you can wait that long.

Personal Notes:
*Sometimes the cold water test will fail. Using a thermometer gives a more accurate read on whether or not it's done, but if you are Maw Maw you probably don't need that.

You need a heavy bottomed pan. Don't want peanut butter in it? Substitute with ¼ c or ½ stick of butter and 1 tsp of vanilla for flavor.

Maw Maw would pour this onto a buttered platter. I don't think she waited until it cooled to taste it. Can you?
